THE PRINCIPLE OF PERFECT POPPING
Popcorn kernels evenly heated at a high temperature burst into PERFECT POPCORN. THE PERFECT POPPER is designed specifically for this purpose.
Preheat the oil in your popper on medium-high temp 475 F is
just right. Observe the oil carefully. As soon as it starts to
smoke slightly, add the kernels and start turning the crank. Stir
continuously while listening to the kernels popping. As soon as the
popping sounds become infrequent remove from the burner immediately empty the
popcorn into your favorite bowl add salt butter to suite your taste.
Follow the Perfect Popcorn recipe. When the oil begins
to smoke add the kernels BUT PILE THEM ON ONE SIDE OF THE PAN. Quickly pour
the sugar on top of the pile of kernels. Start turning the crank and
continue until the popping sound become infrequent immediately remove from the
stove and quickly pour into a bowl. You will probably need to scrape the
popper to remove all the caramel corn while the caramel corn cools. Fill
the popper part with warm soapy water and soak for 15 minutes Clean-up will be
more difficult if you omit the soaking procedure. For a festive flair
add 6 drops of food coloring after you pour in the sugar.

Pour half of the popcorn into an oven proof bowl Sprinkle finely grated
cheese over popcorn Add remaining popcorn and sprinkle with cheese
again. Place in 325F oven for 4-7 minutes until cheese melts.
